This cake made for a knitting Broncos fan is entirely sugar-free minus the fondant, of course…but who really eats that anyway? I was completely baffled when I tasted it and it actually tasted good. To tell a pastry chef to bake without sugar is somewhat a blasphemy, but in this instance it actually worked out. I can now bake sugar-free and gluten free products.
